Shakshuka is a popular Middle Eastern dish featuring eggs poached in a sauce of tomatoes, olive oil, peppers, onion and garlic.
Here’s what you need:
INGREDIENTS
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 1 red pepper, chopped (I used roasted red pepper that comes in a jar)
- 3 cloves garlic, pressed
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- Over half of a can of tin tomatoes
- Freshly ground black pepper, to taste
- Sea salt, to taste
- 3 large eggs
- Bread, for serving
- Drizzle olive oil into a medium sized pan and place over a low heat. Once shimmering, add the chopped onion, red pepper. Cook until the onions are tender – 4 minutes.
- Add the garlic, cumin, paprika and a few sprinkles of ground pepper (not too much). Keep stirring until cooked.
- Pour in the tin tomatoes. Stir and keep it on low heat and leave to simmer. Cook for at least 5 minutes to allow the flavours to mix in.
- Make three holes in the tomato mixture and crack the eggs directly into it. Sprinkle a little salt and pepper over the eggs.
5. Cover the pan with a lid and let cook about 4 minutes or until the white part of the eggs are set and the yolk is cooked to your liking.
- Serve in a bowl with bread on the side and ENJOY!
